Noi di BBQ Masters amiamo sperimentare con le ricette di grigliata e una delle nostre preferite è il polpettone. Sì, avete letto bene, non solo il polpettone può essere cotto in forno ma anche alla griglia! In questo articolo ti daremo la nostra ricetta per preparare un delizioso polpettone alla griglia che lascerà tutti a bocca aperta.
Ingredienti
- 900 g di carne macinata di manzo
- 1 tazza di pangrattato
- 2 uova grandi, sbattute
- 1/4 di tazza di latte intero
- 1/4 di tazza di salsa Worcestershire
- 2 cucchiai di senape de Dijon
- 3 spicchi d'aglio tritati finemente
- 2 cucchiaini di sale kosher
- 1 cucchiaino di pepe nero macinato fresco
- 6 fette di pancetta affumicata tagliente li >
- Olio d'oliva extra vergine q.b. li >
- Salsa BBQ (opzionale) li >
Istruzioni
- In una grande ciotola, mescolare insieme la carne macinata, pangrattato, uova sbattute, latte intero, salsa Worcestershire, senape di Digione, aglio tritato, sale e pepe nero. Mescolare insieme con le mani finché gli ingredienti sono ben combinati.
- Prendere un tegame per pane o uno stampo in silicone da 23 x 13 cm e formare il mix di carne in un polpettone compatto nel fondo dello stesso
- Coprire il polpettone con fette di pancetta affumicata in modo uniforme
- Accendere la griglia a fuoco medio-alto e spennellare la griglia con olio d'oliva extra vergine
- Mettere delicatamente il polpettone sulla griglia e cuocere per circa 30-40 minuti. Assicurati di girarlo ogni tanto!
- Una volta che la temperatura interna del polpettone raggiunge i 65°C., toglierlo dalla griglia e lasciarlo riposare per circa 10 minuti. Taglia a fette il polpettone dopo averlo fatto riposare. li >

Consigli
Ricorda di non premere il polpettone durante la cottura per evitare che perda i succhi all'interno. È importante anche lasciare riposare il polpettone prima di tagliarlo per conservare l'umidità della carne.
Per un sapore ancora più intenso si può mescolare alla carne una lattina di salsa di pomodoro (400g) precedentemente scolata in modo da avere tutti i soli concentrati del pomodoro. Aiuterà a tenere la carne ben compattata e ad evitare che si secchi troppo in cottura.
